I have been making this tasty and nutritious granola recipe for many years and wanted to share it with you. Here’s what you will need:
- 1/2 cup extra virgin olive oil
- 1/2 cup honey or pure maple syrup
- 1/2 cup almond butter (any kind of nut butter works–peanut or hazelnut)
- 1/2 cup water
- 1 tsp. vanilla
- 1 to 2 tsps. cinnamon
- 8 cups regular oatmeal
- 1 1/2 cups unsweetened coconut
- 1 to 2 cups of chopped nuts (almonds, walnuts, or hazelnuts work well)
Preheat oven to 225 degrees. In a sauce pan on medium heat, add the first four ingredients (olive oil, honey, almond butter, & water) and stir occasionally while melting. In a large bowl add the oatmeal, coconut, and chopped nuts and mix together.
Pour granola mixture onto two large cookie sheets (12″ x 16″ with sides) and bake in the oven for one hour. Stir every 15 minutes so that it gets baked evenly. When it is done baking, I turn the oven off and stir it one more time and leave it in the oven with the door closed until the oven has cooled down. I tend to make the granola in the evening so that I can leave it overnight in the oven to cool completely (it makes it nice and crunchy). Instead of putting the granola in the oven to bake, you can dry it in a dehydrator at 105 degrees.
This recipe makes four quarts of delicious granola. I love to store the granola in my favorite kind of glass quart canning jars. Since there are no preservatives, I store what I am not using in the freezer or refrigerator.
